JAE can explain it much better than I can. But yes, if done correctly, it's indefensible. I think it's in the animation. There's no way for your DB to swat or pick a RC'ed ball.

Ok I'll try and break this down while driving 
Rocket catching aka jet packing: when the wide reciever OUT JUMPS a defenseless CB. I say defenseless because the CB does not have a programmed animation for the scenario.
When a user attempts to do this to you your only defense is:
1.hope the reciever is just tall but does not have very good hands or CIT.
2. Hope your cb is big enough, strong enough, and aware enough to SWAT the pass WITHOUT missing the entire ball.
3.Hope you can get a big hit to jar it loose...RARE.
DIFFERENCE BETWEEN ROCKET CATCH CHEESE AND ROCKET CATCH SIM BALL:
In the video game world a double covered reciever will still catch that pass with a percentage BECAUSE OF LACK OF ANIMATION FROM CB.
Cover 3 will double cover with quick safeties,2man under, 1 high safety, and any other zones with multiple high safety coverage will double cover as well.
COVER 2 and blitzing will allow 1 on 1 coverage. In desperate times I could see a qb attempting to exploit this in real life but the chances of completion even then are very slim IE: HAIL MARY.
I'm ranked 300 something and I hear all the bullshite these top 100 guys talk and that's there money play ROCKET CATCHING, there are entire defensive set ups that people have come up with to nullify rocket catching.
TO BE CONTINUED traffic is bad
