I did all the missions for the messican army dude and for the old cowboy/oulaw, then last night finished helpin those messican chicks on a stage wagon escape to the river.
nothing has popped up on my screen mission wise, now what?

For fun you should throw a stick of dynomite into a herd of buffalo.
Multiplayer hint- when you have to hunt the legendary jaguar, go to Tanners Reach. There is a cabin with a stack of logs on the side of it. Get behind the logs. The cougars can't get to you back there. Just keep shooting them until the jag shows up.
Same for the legendary bear. Go to Bearclaw Camp and go into the cabin. You can shoot out, but the bears can't get in.
