The game mentioned something about assigning residents to certain jobs, like in FO Shelter, but when I finished putting up the defenses, the guy just said "thanks, later". So I don't know if I need to get in there and micromanage.

You do. You have to go into the "workshop view", click on each settler individually, and assign them to the shite you build. Crops, booths, gaurd stations, water purifier, etc... Your "number" doesn't go up until you do.
Re: Scrapping. You can only scrap in workshop view, in your settlement. Building will scrap the required items for you as you build. The only time you scrap things (via click/button) is when your running around in workshop view scrapping trees, cars, houses, couches, etc...
If you really wanted to scrap the phones one at a time (for whatever reason) you would have to drop in from your inventory while in a settlement, switch to workshop view, then point at it on the ground and scrap will be an option.

For anyone looking, Cambridge Polymer Labs is a good place to find Telephones/copper. You can also find a special power armor torso there.

I'm not too far in as yet, with only 3 settlements and Sanctuary being the one I focus on.
Are there actual raider attacks against your settlement? Meaning that positioning of turrets/guard posts is important, or can you just place them anywhere so you get the defense points?
For Sanctuary it made sense to put a turret and guard tower right on the main road across the bridge, but idk if the raiders ever swim.

Yes they will and they will also slide in on your settlers while you're gone and kill them... I had one site drop from 8 to 2 overnight... Was a fricking slaughter
I'll try to post a pic of my front bridge setup... Basically two tall guard towers ground level, a platform built above them with ladders to the rear... Four turrets and two lights for nighttime
Also, put some in the back entrance facing the vault... Had some super mutants come from there once

It feels strange being so "directionless" in this Fallout. I honestly have no idea what the main quest is. I think it's the Nick Valentine quest that's sitting in my list, but I'm not positive.
Still, the overall atmosphere and environment is even more awesome than usual, IMO. The background music especially. Not the pip-boy radio shite, but the score when you're getting to the bottom of a dungeon, or the sudden change from nothingness to a freaking ghoul being literally in your face. None of the dungeons look the same except for vaults. Weapons mods are great. Settlements are like a separate minigame. I think Bethesda gave me what I wanted
The museum of witchcraft, both outside and in, was great. I would suggest checking it out.

Question: If you join the Brotherhood (after doing the first mission for them where you collect something for them) is that going to prevent me from doing anything later on? It was pretty early on, but i don't want other factions hating me so early.

Shoot...I lied. It wasn't Cambridge but I can't remember where it was.
The police office in Cambridge is a part of a quest line, the police station I went into was just some abandon building you could tell was a police station. Trying to remember where.
