Mario Kart 8 Deluxe (Online Racing Question)

So I played MK on the Wii U and it was a similar interface, but apparently you have to pay for the switch online racing... which is fine...
I'm having trouble getting my fiancee and myself into the same game with our *own* characters... where "I race my guy" and she races "her Mii girl character"...
Basically, if I select "Online" and then "VS Race" it only asks for one player... so I click on my Mii and then there'll be two of me in the race and so forth.
I remember a way where another player was able to play along in the same session on their *own* Mii Account and get their own scoring/points/etc.
Please advise. TIA, boys.

I really wish this game would get a massive price drop. I'm not paying $50 after I paid it 6 years ago for the Wii U version.

But it's a great game to play with a few friends and easy enough for most people to pickup quickly.
