It's funny I don't know if I would enjoy Jade Empire now simply because of China being a-hole

I just got kotor on steam. Shoould I find a graphics mod for higher resolution, or just roll with the original graphics?

I played it a few years ago and didn’t find the graphics off putting. With that said, there was one particular area that did not play well with modern hardware. Shot visible rays everywhere and dropped to single digit FPS. I can’t remember if I had to patch it or just tweak the INI, but it was brutal until I did so.

Graphics mods aren't really needed, but I would google how to play KOTOR in widescreen. It's not very difficult to do, but it doesn't support it natively. KOTOR II (via Aspyr) got an update years ago to natively support widescreen, but KOTOR did not.
There are some advantages to this. The FOV feels ever so slightly wider, and the UI is a lot less intrusive. The UI of KOTOR II feels massive after playing KOTOR I in widescreen with everything being so tiny.
I would also swear that KOTOR runs better. KOTOR II had some odd FPS issues after the widescreen patch. FPS will go down into the 30s-40s for no reason.

It was meant to be a turn based D&D style system
It was D&D, or more specifically, the D20 system that was spun off from D&D v3.5.

Kotor 2 was always significantly buggier, even on console.
KOTOR 2 was an unfinished game that was rushed out to consumers to be in stores in time for the holidays. There’s all kinds of unfinished content code buried on the disk which can be unlocked via mods. There was a whole additional planet to visit, and the final part of the game on Malachor looks rough because they literally didn’t have enough time to finish it.

KOTOR 2
It's mind-boggling just how much content was cut from the final release, like you said a whole extra planet, a much longer finale and just a lot of little touches that could have made KOTOR 2 one of the all time great sequels.
The restored content mods online are fantastic, I really wish the developers had the extra time to release their full vision. They knew the game wasnt done but the publishers wanted that sweet Christmas release money.

Not to mention that it was supposed to be part 2 in a trilogy.
