I'm at Grand Archives as well with my 75 pyro build... been invading some, but haven't run into you yet. Make sure to ember up regularly 
Not quite at the 3 NPC/Gank Bridge before Lothric Princes door.
The Titanite Slab is under the final elevator before Lothric Princes. It leads down to that elevator near Dragonslayer Armour if you take a left heading towards where those 2 Dragons were. Its one of those elevators where you can go both up and down but you have to roll out to get it in the right direction.

Can I go around just farming souls? For instance, get a couple thousand souls by resetting demons at a fireplace, then fast travel back to ole girl and have her level me up every time?
Reason I ask is; this assassin doesn’t really have great armor and I want to get my health up (rigor) to last longer in melee fights.
Then, I’ll start upgrading the bow and magika (spells).

Absolutely. Dark Souls 2 had a dumb thing where if you killed an enemy 10 times, it would stop spawning. Thankfully they left that out of 3. But if you feel comfortable with an area, can handle the enemies, and can get back to a bonfire easy enough, have at it. I'll probably do some of that in the Archives tonight. Although, it's taking about 50K souls a pop to upgrade now.
ETA If you haven't figured it out yet, when you find "Soul of a Crestfallen Soldier" or any other kind of soul, "use" them to add more souls.

If you join the Company of Champions covenant, they will keep respawning so you can farm.

Gardoki was saying there was something you could do to bring them back but they'd be even harder. That might have been it.

Don’t get too hung up on your class. It doesn’t really matter outside of the first 5-6 hours in the game. You can find any armor/weapons you want and mold your guy into whatever. Try to focus on dodging and not getting hit instead of tanking hits with armor

Hopefully I'll get to that one tonight. I might farm souls and try to get my 2 titanite slabs so I can upgrade my sword one more time.

Just got to the twin princes. Chaos Broadsword+10 and flame +10. I'm gonna rest before I go at him. Grand Archives seemed like it took forever to get to the end of. It is a great place to farm souls though.

And I'm just going to say this: From could put someone's half dead invalid grandmother in this game, if they give her a shield and a spear, I'll struggle.
