I wish I hadn't been "scared" of NG+ for so long

So I recently got the platinum for Elden Ring on PS5, feels good. 3 of the trophies were for 3 different endings. Since I knew how to streamline the main story, I decided to run through the game 2 more times as opposed to doing the upload to cloud/disable auto sync trick (From, for me, include multiple save slots in the future, thanks). I have been using the Starscourge Greatsword for a majority of my first playthough and wanted to keep it, so I decided to start a new journey, NG+.
So in my head, i associated NG+ with the game getting harder, like a challenge mode. I remember finding a ring in Dark Souls 3 that made the enemies take less damage or something............soulsborne fans are sadists, so I just assumed NG+ was another way to torture yourself. Let me tell you, taking down Margit in 4 hits stirred up emotions I didn't know I had and I was all in.
I played through Dark Souls 3 three times and I feel dumb for starting a new character every time.
This weapon, Prelate's Inferno Crozier, is what I was using when I got the platinum, it's so stupid and soooooooooooooo fun.

Your fear of NG+ is warranted for Demon's Souls. That absolutely sucks.
Dark Souls 2 has the goat NG+ system (new enemy types/placements/etc.). It's a real shame none of the other Soulsborne games used it.
Also, if you ever play a Nioh game, you get over your fear of NG+ quickly because the real game doesn't start until NG+++

So how exactly does it scale? Or does it? For both of my NG+ playthroughs, it didn't feel like it got really challenging until the very end. The first one I one shot Godfrey, second time he gave me a ton of problems, but that's any boss, really.

I learned to love New Game+ back when ChronoTrigger was the first game I recall sporting that feature.

This isn't always the case. The Horizon games, for example, are the exact same in NG+ except you get to start with all your gear. You have to manually change the difficulty level to make it harder.
