Who here plays? I play a lot on chess.com, I’m not very good but improving a lot (my rapid rating is 700, daily rating 950).
What are the best videos/resources out there for learning? I know a few solid openings (Sicilian, Ruy Lopez, Ponziani, Queens Gambit).
My struggles are mostly in the middle game, I’m bad with chess theory and I’m slow to read the board which is why my rapid rating is so low. I’m not trying to becomes a GM or focus countless hours to memorization, just trying to improve my basic understanding of the game and middle game tactics.

Stick to one opening for white. I highly recommend John Bartholomew's chess fundamentals playlist on YouTube. Aside from that, your worst issues should probably be hanging pieces and missing tactics. Bartholomew's series goes into depth about how to ensure you don't hang pieces. I recommend doing a lot of puzzles on chess.com to improve tactics and pattern recognition. Lastly, stick to rapid and always make sure you analyze your games. I'm guilty of switching to blitz and bullet a lot because it's fun, but it doesn't improve my game much.

The Chessbrahs aren't everyone's cup of tea but Aman's series chess habits is a gamechanger. That series really helped solidify my foundational understanding of basic concepts.
He's also done a couple of 400-2000 rating runs of openings on both sides where he'll just spam an opening from low rating to high rating. Those are great if you see an opening you like and want to get a look at all the different ways it can play out and get a handle on all the tactics that come from it, especially in rating ranges that you'll be playing in yourself. I actually just added the Stonewall to my openings list thanks to his latest series.

I picked up levy rozmans (gotham chess on youtube) book at Barnes and noble a couple of weeks ago. The first half of the book is for complete beginners but the second half is excellent without being just a huge list of move orders like a lot of chess books. A great section is devoted to middle game and spotting tactics. Definitely worth the $24 bucks.

Thanks, I like Gothamchess for instruction on YouTube because he’s very matter of fact and not afraid to tell you that you suck 
I am also definitely looking to learn theory and not memorize moves. I know great chess players have lines memorized but I just don’t see myself devoting the time and energy into that. I’d be happy to be in the 1200’s and I think I can get there without a bunch of memorization
