So I saw at nola.com they posted a 30 minute crawfish etouffee recipe and was like hmm what's that about.

The article nola.com talks about some other shortcuts but references this product.

Zydeco Chop Chop was originally created by Tim Bellard back in 2008. Tim was inspired to create ZCC for personal use and easy access to the Cajun Trinity while cooking. It wasn't until 2014 when Tim finally gave into his friends and families pleas to share his Zydeco Chop Chop love with the rest of the world.

Anyone tried using this?

I saw it in cellophane bags in the produce section of the little grocery store at Stelly's in Lebeau some years ago. I bought a bag and stuck it in the freezer since it had been in the refrigerated section of the grocery. I never used it, though. It may still be in my freezer. I haven't seen it in the containers.

I'll throw dried onions in when I'm lazily cooking a bag of frozen collard greens, but if I'm actually cooking, I have to have the real stuff.

Is this just trinity plus garlic?

If so, Rex Foods has had this product for years. I've used it and it works pretty well, but it's not quite like fresh.

It looks similar to Rex. I don't think I've used Rex. I use dried onions and dried garlic sometimes, but I haven't used an entire mix for anything that I can recall, though it's probably fine for some dishes. Sometimes, I like the taste of the dried minced onion and garlic. I've used the garlic in gumbo before when I've thought I needed more. Works just fine.

I may. After frying the andouille for beans I usually put a batch of seasoning in there and cook it down before adding everything back in.

As an experiment, I once made red beans and rice entirely using dry ingredients. I used the Rex seasoning, bay, thyme, dried green onions and for meat seasoning, I used a couple of packets of Goya Ham Seasoning. You use 1 packet for each 1/4 pound of ham flavor you want.



It turned out very acceptable. Perfect for use when camping, for example.
