Yeah I need to document this next time I do it, and take pics. I did it the first time just to get rid of an onion we had for a while, and we loved it. I cut it funny one time and it all just fell apart, but we still ate it and it was good. Depends on the size and shape of the onion, but slice along the equator and do at least one inch thick full slabs. Flat on top and bottom but smaller on the bottom. At least wide enough to span a few grate gaps, can't get too small or it just doesn't work on grates (I did it once on a copper sheet over the fire, that was easier).

Score the top (bigger side) just a little to rub spices in. I don't measure spices usually, but there was paprika, cayenne, garlic powder, some salt, ancho powder, and brown sugar (as much brown sugar as the rest combined). Rub it on there good, also pile on top because when you start cooking it juices everywhere anyway. Cook spice side up until it's as soft as you want it, then flip and get a sear on the spice side. Slice radially and you end up with pieces that are crispy on the edges, soft in the middle. I do over wood fire so there is smokiness.

Definitely not culinary genius, just simple and good. Any of you could do it better if you tried. It is way easy to break it apart when flipping, there is a best way to cut it that I haven't perfected yet. You could probably rub the whole thing down, but I was aiming to have it cook before sugar burns.

Summer grilling needs bbq sauce sometimes- chicken/pork steaks/hamburgers. That brings me back to childhood.
