Your best deer chili recipe

I do one, but I think it could be better. Trying to see if there is something I might be over looking.

OP I always have 5% fat added to my deer. Most people here can give better recipes but this is what I do.
3 lbs ground deer meat.
1/4 cup chili powder
2 Tbs of cumin
Onion
Poblano pepper/chili
Either 1 or 2 regular size cans of tomato sauce
Either 1 or 2 cans of red beans. I prefer no beans but wife and kids want them. I always get the dark red beans and make sure it does NOT have chili sauce in there, get cans of straight red beans and that's it.
4-5 garlic cloves
I put a Tbl of oil in pan and smear it around and heat up then put onion cut up and garlic cloves minced in there and let cook a few minutes. I put the meat in and add Kosher salt and black pepper, then poblano. Then I add chili powder and cumin. Let cook a few minutes and then tomato sauce and beans. I'll fill up 1 or 2 empty cans from tomato sauce or beans with water or beef broth and add in. I'll cook it on low for an hour or so. And at end strain some of the liquid if I feel there's too much in there.
We always do a frito pie, so frito chips, sour cream, and whatever kind of cheese grated you may like.
I'm typing all this w/o looking at my recipe and you may have to add some chili powder or cumin. Sometimes my amount works just fine and sometimes I need to add some, just taste it. A lot of people don't care for ground meat in chili, if that's you, then substitute for whatever you like. Wife and kids want ground meat, so that's what I do whether with deer or beef, b/c I don't care either way.
