Wild mushroom storage- dehydrating and freezing

So I stumbled upon a big cluster of fall oyster mushrooms yesterday (P. ostreatus) at my local mushroom honey hole. Total, I got about 6lbs of mushrooms before any sort of trimming or cleaning up. You can see more pics in this Outdoor Board thread: Foraging in DFW



I knew I wouldn't be able to eat them all fresh so I decided to preserve the bulk of them. First I rough trimmed them removing any dirt, debris and large sections of hard stems. This removed about a pound of the mushrooms and I saved it a freezer bag for later use.

Here are the cleaned up shrooms:


Next I took most of those, sliced them into 1/4in slices, removed any remaining stems or tough pieces, and dehydrated them in the oven at 170F for 4ish hours. I propped the oven open with a spoon to let the steam and moisture escape.


Three pans of mushrooms yielded approximately 3oz of dried that I'll keep in mason jars for future use.


I also wanted to try cooking and freezing some as this is the other most commonly recommended method for longer term storage. So I cooked down some of the sliced mushrooms in butter:


After they cooked and cooled completely, I vac sealed. This yielded about 12oz of shrooms:


All told I'm extremely pleased with how everything turned out and looking forward to enjoying these for the next 3-6months. Final tally is 2-3lbs of stems and tougher mushrooms for stock, 3oz of dried mushrooms, and 12oz of mushrooms cooked and frozen:

Man in love wild mushrooms. I go a couple times a year and get some. You should try making a wild mushroom stew, very good. We also batter and fry them.
