Yes, it is an invasive species and not edible raw, but we have these things growing on every creek and gully of the family ranch. In season, I could harvest 100 bushels of sour yellowness if I wished.

I have seen recipes for jellies and marmalade, plus drink recipes.

Have any of you tried to make anything with these things? If so, what? And how did it turn out?

Maybe try making a Limoncello. I'm sure there are plenty of recipes on Google & it's really sweet so may play well with the sour.

Take ALL of them to your local brewery, and let them put them in their next beer!

Since you would be using the peel/rind and not the lemons actual juice I thought they would work as well. You just don't want any of the white pith in it.

Plus with the 4-6 cups of sugar was thinking would counteract the sourness

Have a link to a recipe I've used before if you'd like to take a look.

Sour isn't the same thing as bitter. You definitely don't want bitter peels in limoncello, the stuff will be undrinkable.
