When I say my wife bought some gator meat I really mean she sent me a text while I was at worked and asked me to stop on my way home to pick some up. Got a frozen package of tail meat. I've only ever had fried alligator so I'm looking for some non fried suggestions. Can I treat it like chicken in any recipe with chicken? Substitute the chicken in my gumbo recipe with gator instead? Any better traditional way to look it?

Best gator I’ve ever had was blackened. Cut it to nuggets, season all over and blacken in scorching skillet like you would a fish fillet.
