I've read the thread. gumbo2176 had the first mention of the "washday" story. He was responding to the OP. The washday story in no way answers the question posed by the OP. Again, it's a nice apocryphal story. I'm not denigrating it. I've even told it myself. It just doesn't answer the OP's question.

cgrand, and a few others, are the ones that have actually raised valid responses as to why it's such a popular dish in Louisiana.

I remember having red beans and rice on Monday at school and then you would go home and your mom would have a pot of red beans and rice on the stove.

That's my question? Why red beans and White beans? Why not lima, pinto or black. Why specifically are red and white beans so popular in South LA?

If slaves brought them over and taught the French to cook them why aren't red and white beans popular in Africa or the Carribean?

Great question. Would be interesting if anyone comes up with a reason that is specific and unique to south Louisiana.
