Pork Temple meat
Lamendola's, Murray's, DeLaune's, Ralph's and LeBlanc's all in Gonzales carry it. Most times its not in the meat case so ask the butcher and he will cut you a block to whatever weight you want.I use two lbs per gallon pot.

ETA: I usually do 1 lb chicken, 1 lb pork, 1 lb sausage.

LeBlanc's in Walker is closing, or has closed, and is becoming a Carter's. Not sure if that's good or bad.

I found Lamendola's first, and they had a partially frozen pack labeled "Pork Temple Meat" of 5-6 lbs for less than $10. They had other smaller packs labeled "Jambalaya Meat" on trays for about $3 a lb. The guy working there said he didn't care for temple meat because he said the meat "got stringy". Is that true?
I also found Leblanc's Seasoning on sale for $1.29 for 8 oz. I got 3. While I was checking out, the cashier said I had to try their hogshead cheese and she even went and got it for me.
Next, I came across Ralph's. They only had the 1 lb trays of jambalaya meat for about $3.50/lb. I didn't get any, since I already had some to try. But I did get their hogshead cheese and some bacon maple smoked sausage. I also got some Leblanc's Hot Seasoning Mix.
Must have driven past Leblanc's Market, but I look forward to coming back and checking out the others.
