yes, they are just bread crumbs made from bread that the crust has been removed. it gives dishes a lighter color and the crustless bread crumbs taste better IMHO.
i exclusively use panko now

Chicken parm. Or chicken cutlets in general. I used to make decent ones with Italian bread crumbs but they are infinitely better with panko. You can get away with not using a ton of oil and it still having texture and crunch of something deep fried

Chicken Cutlets are great with panko! As a summertime dish, I like a chicken cutlet with panko with just a dollop of pesto mashed potato, served with a frisee salad with bacon lardons, crumbled roquefort or stilton, and a nice vinaigrette. It's great for me as a summer dish because while filling, it doesn't hold the oil from frying so not too greasy. They key for me is just a little bit of the mash for tasting (so as not to feel too full).

For Italian recipes I half and half. But for the most part I've switched to panko.
