Anyone here brine their brisket? I'm a huge proponent of brining for whole chickens, pork butt, and brined the ribs I did yesterday...they came out great. Just curious if that benefit pulls through to briskets as well.

As for wrapping, I prefer the butcher paper wrap on my pork butt (haven't done a brisket in forever) to help get through the stall and also maintain as much bark as possible.

Only seen people talk about it online.

I brine pork butt.

Thanks for all the info everyone... I might hold off on doing a brisket for the first time since we have people coming over. Plus with the timing of everyone coming over I'd have to smoke all night
