Being in Birmingham, I can serve the simplest of cajun dishes and get good results. Since it is better than anything they can get in any cajun restaurant here, it always impresses. I usually do a sampler of two or three of the following: shrimp or crawfish etoufee, crawfish pie, jambalaya, chicken/andouille gumbo, etc. Etoufee is always served since it is my wife's favorite, then som mix of the others. Not fancy food, but then again, I don't have many black tie events at my house anyway.

Never did this growing up. Now this is the only way we eat it. My SO (TX) will only eat Gumbo this way.

Damn, I've been gone from louisiana for too long. Is this the new way to serve it? I may have to try this, since my wife doesn't eat rice. Hell, may try it with my etouffee as well.

I find that Hormel brand corned beef hash (two cans) over Uncle Ben's rice, served with iceberg lettuce doused with a good bottle of French dresssing is a surefire winner.
