Curious how long does the turkey take. And what wood smoke do you use.

For poultry i like to use apple or pecan. Hickory/Oak are overpowering.
I am doing a turkey breast Thursday. I’ll cook it at 275-300
to 155-160 internal and pull it to rest.

Prime brisket and a butt. Took off the boneless chicken thighs earlier-perfect fit on a croissant for sandwiches this week

GF bought some discount beef ribs, and they were cut into singles. So those are on the smoker going on almost 3 hours. First time doing them, the meat is only choice, and they're cut up. So this could be a disaster and we might be having jerky for dinner

I think she thought she was scoring some beef plate ribs (aka the brontosaurus bone) but alas, I'm not sure where to find those in the city.

Damn right!

At about 170 right now. I wanted them to be beef plate ribs so badly I even seasoned them that way...cracked pepper, salt, and a little red pepper flake

Final product. Had to work for the meat a bit and they had some chew but i expected that and they had really good flavor.
