Age
In the jar, the taste will change over time. What you are tasting is chemical degradation of the carbohydrate and oxidation of the oil. I do not have a label, but I assume they add stuff to the blend that you wouldn't add at home. Probably stabilizers....

No idea why they would want to ruin roux with that. I can immediately taste that in roux out the jar. Cant stand the taste.

It all oil and flour, what separates them is the type of oil used.

I used jar roux for years before learning (with help from this board) to make my own. I don't think I'll ever go back to jarred stuff.
Maybe just because of the satisfaction i get from being able to say i made it myself.

Im the same, except I havent moved off the Jar yet.
My gumbo comes out so good using the jar I see no reason to change to making my own.
