Back on topic, papa murphys in lafayette closed down! What the shite is this about?! I'm pissed now.

Bought the shrimp. Decided to do steamed mussels in a butter white wine sauce and roasted spring veggies.

So we'll have the BBQ shrimp and mussels with Italian bread for dipping.. And spring veggies.

Making stuffed bell peppers. I've never made them before but I'm giving it a shot. Stuffing: quiona, zucchini, (yellow/starburst) squash, mushrooms - topped with homemade roasted tomato sauce. I couldn't pass up 6 bell's for $1.50 at Southside.

I was supposed to make some stuffed peppers tonight with shrimp, crawfish, eggplant, trinity. Got too lazy.

My parents came over and I grilled up some burgers. 80/20 chuck, salt and pepper, medium rare. Since its nice outside, I opted for the grill instead of the cast iron.

I just got some head on fresh shrimp given to me... What should I do with them?

Thinking about boiling some to eat and maybe shrimp and corn soup tomorrow

Yum! I didn't have either of the two on hand. Did you mean in the stuffing? I actually used Pecan Oil that I picked up at the Farmer's Market yesterday which has a nutty flavor.


This is before I popped em into the oven. Tomato sauce is roasted tomatoes, garlic, fresh basil and thyme made in my vitamix.

Just realizing I forgot to add some sun dried tomatoes I have. Anxiously waiting til they are ready...

embo, I did mean in the stuffing. I'd have also reccommended a little feta, but dat's not vegan!

Did you parboil your peppers so they'll be tender enough?

My supper was ugly. And not as tasty as it should've been. :(
