What's a good boneless lamb shoulder recipe?

Nothing that takes too long. Forgot I had it in the fridge for dinner tonight, so scrambling a bit.

We just grill them medium rare and serve w/ risotto or orzo salad. Maybe top it with a chimichurri sauce.

Yea, I'll probably jut season and sear unless something posted piqued my interest. Some type of herb sauce/topper is a good idea.
