In France the only condiment for raw is a squeze of lemon juice. The North Sea/English Channel variety of oysters are a thing of beauty, little jewels that scream "Eat Me" the shells have a pink hue to them. If you ever find yourself there ask for the Fruit De Mer and prepare to die as it is a seafood platter that you will never see again beauty and flavors that are awe inspiring greatness.
