What to put on the smoker this weekend?

Went to the meat market on the way home and got a rack of spare ribs, some short ribs, and some thick beef ribs. Not sure which direction to go yet.

They're good, and much quicker than other stuff. You just need to set your expectations that it's more like a steak than other traditional BBQ.

1 trimmed and about to trim the other.

Trimmed and lightly rubbed with some Killens S&P rub. Family won't eat it if too much bark, so I have to keep it lighter than I would want.
Smoking with a hickory and oak mix. I'll update with final pics tomorrow.

Going to smoke some yard bird leg quarters. Pull the meat and serve with some of my wife's killer mac&cheese and some collard greens.

Chickens on sale, so I picked up a few packages. Then l grabbed a beer when l cranked up the grill.
Next thing I knew I had two deer roasts on the counter. Gonna make jerky and gumbo while the smoker is rolling.

4 racks of spares (sale @ Dorignacs) and some chicken wings going on the smoker in a bit.
