I made pastelitos with Ancel guava paste (comes with the jelly center) and had a large chunk leftover since I only made one batch. I have about 8 more boxes of the stuff so I'm looking to find different cooking or baking uses for this.

You could probably make a good BBQ sauce with it. It'd also probably pair well with some cheese and crackers. You could maybe mix it into some sort of tropical drink, would probably need a blender or something since Im not sure of the consistency of it.

It is very thick. It would not do well in a blender. When baking I can get it melted down and it loses it's shape but it is hard to work with when dry

The chain restaurant Pollo Tropical has a guava BBQ sauce that's featured in a couple different dishes. It's a good balance of sweet, tart, & tangy.

They also make a guava cheesecake that's pretty good.

You could always rub it 'pon me belly like guava jelly!

Melt it in a pot of water to a thin BBQ sauce consistency. Use it as a basting sauce when smoking pork when you wrap in foil for the last hour. Freeze the rest for when you need it again.
