Brand?
Aluminum or Cast Iron?
What size works for you? (I cook with a large Dutch oven often)

I cook with a lot of cast iron but a cajun aluminum feels like it would get a lot of mileage in my kitchen.

We have several.

Quisinart maybe 12 QT enameled cast iron.
Black cast iron, suitable for cooking in oven or over a fire.
Also a flat top cast iron fish fryer, maybe 20 QT, with a flat lid. Only use it for frying fish.
Old Old aluminum, big enough for a 40 pound turkey and dressing.
Blue enamel steel with white spots in the enamel - Think old country cooking. One big enough for a fat hen and one about right for a young pullet.
Since you mentioned dutch ovens, we have two of those.

Use all of them.

Like MD said, I have afew.
1930’s era Griswold #5 and #7
1920’s era Wagner #5
Chinese Magnalite at camp.

I use the Wagner far and away the most for roasting.

When cooking soups etc is use the Griswold Dutch oven’s ranging from 1880’s through 1930’s era.
Love em. Nothing like good cast iron. If what I’m cooking is full of tomatoes and I’ve got to cook it for a long time, I’ll use enameled cast.

I was gifted an aluminum oval roaster recently, but I'm having trouble figuring out when to use it. I feel like I do most roasts/birds/etc out on the smoker. And I have a cast iron dutch oven that's my daily driver for most gumbos and jambalayas, etc.

Thought about using it for the turkey this Thanksgiving, but the wife will have the oven full - so I'll probably go back to cooking it outside again in the smoker or fryer.

I'm pretty sure that's the same one I found in my wife's grandparents house. It makes the perfect size gumbo. I've never measured it, but I bet it holds 8 quarts. I've never actually used it for roasting

Yeah the 4265 is 8qts.

I plan on using it for just about everything I use my enameled Dutch oven with. Like gumbo, red gravy, roast and pretty much everything else I love to cook.

Just need something bigger and would love an old aluminum oval in my collection.

There’s a 4267 (13qt) aluminium on eBay right now. Lots of 4266(8qt) also.

6 quart Le Creuset oval roaster
13 quart Magnalite oval roaster
17 quart Magnalite oval roaster

Gave my smallest Magnalite oval roaster to my son. Maybe 5 or 6 quarts? Not sure.

From what I learned today, there were 5 sizes of oval roaster produced in the Mag line. All (I believe) are available on fleaBay. You obviously will pay a premium for both extremes of the line as they are harder to come by. The middle of the range are quite reasonable imo. Given that I paid around $60 for the 13 qt in circa 1980, $100ish seems reasonable. Different story if you’re trying to build a set of all! Fun fact, somebody there is trying to sell the McWare Cajun Classic (Chinese) for $200+ per piece

I just paid $170 for the 4265. For something that’s now gonna be in my family forever, I feel like it’s a good price
