Royal rice
Two cups cooked rice

Sautee a bunch of mushrooms, onions, green onions with a stick of butter and cook them down. Add the rice and a bunch of peas.

Pretty easy a and tasty.

Other than that jambalaya

1. Jambalaya
1. Boudin from an Exit 97 store or a Proven Cajun with a meat grinder and Stuffer.
2. Rice Dressing / Dirty Rice
3. Stir Fry Rice

I could list the typical classics, but how about my favorite “chopped” rice dishes?

1. Black eyed peas and rice

4 cans black eyed peas, drain 2
1 container Publix medium salsa
Rice

Cheese, sour cream, avocado, jalapeños, etc for toppings (choose one or all or none...doesn’t need them)

Cook peas and salsa together for a while. Should get to the consistency of red beans.

Serve over rice and add desired toppings.

2. Cheesy rice with avocado

1/2 cup Shredded Colby jack cheese
1/2 avocado, sliced or chopped
Rice

Sprinkle cheese over top of rice. Add avocado, but don’t mix.

3. Rice and eggs

2-3 eggs
Leftover rice (enough to cover a large pan)
Butter
Shredded cheese

Seasonings or Toppings if you want.

Add some butter to a pan. Spread leftover rice over the bottom of the pan. Let cook over medium heat for about five minutes. You want the rice to brown when all of this is done.

Make some holes for eggs. Add an egg to each hole. Add a tablespoon of water and cover.

Cook until eggs set and rice is brown and crunchy. Sprinkle cheese over.

Carefully remove “rice pancake thing” to large plate.

Saffron yellow rice, onions and Baby carrots in my cast iron skillet
Seasoned Chicken legs and thighs laid over it
Water
Cover with foil
Bake for about 45 minutes
Broil for the last 5

Yum.

Rice in eggs in the AM for breakfast.
