Stainless is heavy as hell. If you are using it for seafood and not brewing, aluminum is your answer.

I have a stainless turkey fryer that I will boil shrimp or a few dozen crabs in. I have my 120 that is aluminum that I boil big batches in. I wish my big pot was stainless, the stainless is way easier to clean.
