Why not? How much can an employee produce in one hour?
Trim, grind , grind again, season and form patties. One brisket per hour? If not he needs to go sell flowers.
$12.00 per man hour * 140% = $16.80 * 126.5% = $21.25 per man hour. That's assuming you are paying 12 per hour, 40% labor burden and 15% overhead and 10 % profit.
How many patties in a brisket?
Yes. I think the extra cost of importing a product would equal the amount of one employee making a patty or hand cutting fries. The labor to cook and serve is the same. The only additional labor you are incurring is the actual process of making something from scratch.
I don't know what his import costs are, I'm speculating but if I order sausages from Europe I'm thinking it's substantially more than if I buy them in bulk at SAMs and if I'm buying alligator sausage from Troy Landry I'm assuming it cost more than SAMs as well.

Sorry, thought this was a debate about overhead cost between a small kitchen operating out of a dive bar compared to the cost of a full blown restaurant in a brand new facility. And I don't believe yall have more employees than the new Dat Dog sorry.
