I have a smoker that I have never used yet. I plan to get something going Sunday to have ready for gametime for the LSU game.

It is a charcoal smoker. I'm fairly skilled with a charcoal pit. That is the only pit I have and I use it often. Whether or not that will have any use when using a charcoal smoker, I do not know.

I'd like to keep it simple for this first go at using the smoker. What would you suggest I do? Any links to threads or recipes will help. I know nothing.

Pork butt. They just recently had a thread. I'm on my phone. Just google "pork smoker tigerdroppings" or something like that. Also tvwbb.com is a good resource regardless if
It's a weber.

Depends on how many you are feeding. But the easiest is, pork shoulder and bologna. The pork needs to stay on for awhile but the bologna only needs to be on for a few hours with some smoke (technically it does not matter how long the bologna is on since it is already cooked) Also you can add some ribs. For the first smoke always stay away from beef, until you figure out the ins and outs.

I actually don't even know the brand. It's not one of the fancy ones. My Dad saw it at some place he was at and just picked it up for me.

I would let some charcoal and wood smoke on there for a few hours Saturday before you use it on the meat.

If you havent seasoned it,do that first.Bring it up to about 350 or so for a cpl hours to cook the oils and other chemicals off.

Then get a bone in boston butt,7-9 lbs.Trim the cap off it and season it liberally with a good dry rub .Have your smoker about 225-250 with your choice of wood;oak, apple, and hickory are good for pork.Put in on and smoke it until you get an internal temp of 195-200...Pull it for sammiches and let everybody think you are a BBQ wiz.

DO THIS. bbrou33 has given you the most forgiving and IMHO most tasty cut of meat to start your smoking career on.

If you want to do a butt you will need to start it real early. I would give it 1.5-2 hr/lb. Try and have it done well before eating time. Then you can wrap it in foil and a towel and keep it in an ice chest. this will keep it at serving temp. for several hours.

If you want something easier, try chicken thighs. Only take about 2 hours total and are always delicious. When the skin is sweating they are done.

My suggestion is to brine a couple of whole chickens cook for about three hours. Also a pork tenderloin cooked for 1.5 hours then 1.5 hours in foil would be easy for a first smoke.

If it has never been cooked on before, I'd at least run a few logs of wood through it to burn off any resdiue from manufacturer etc.
