The Chimes has incredible Blackened Gator, they serve it with a dijon mustard/horseradish/mayo sauce.

Id only had it fried until a friend of mine grilled a buntch of leg meat once. I thought it was delicious. Reminded me of frog meat but more robust.

But im gettin further away from frying everything. Lose all of the subtelties of whatever the meat is...

Gator can be really good if you do it right. I've found that marinating it in a vineger based marinate helps alot. I think it helps break down the connctive tissue. You can taste the marinate obviously and the meat is much more tender.
