What Do You Do with Garlic Scapes?

They are the tops of growing garlic bulbs.
My brother bought some by mistake - some sweet pickled and some fresh like pictured.

They are great in stir fry. I use them kind of like green onions for seasoning other dishes since the flavor is very mild garlic flavor kind of like if you use Elephant Garlic.

Should have mentioned, I'm a pepper belly type who can eat hot stuff very easily. I make my own pepper jellies, hot sauces, dried pepper flakes and hot vinegars out of habanero and ghost peppers-------and I don't skimp on the amount of peppers when making it.
When I make quarts of my hot sauce, I generally use 30+ habaneros, pith, seeds and all for each quart.
