My grandmother called those wrecked eggs. She just cracked in the pan and wrecked them.
Her scrambled eggs were whipped with a fork and were either soft scrambled or hard scrambled eggs.
Soft or hard I’ve always determined by the curd size and set.
And I love all three. Especially over a piece of sourdough bread slathered with Kerrygold butter.

That's called Country Scrambled.
Learned that from an old black lady short order cook in South Carolina. She asked how I wanted my eggs, country, soft, or hard. Told I'd never heard of country scrambled so I'd take those. That picture is exactly what she produced.
Love 'em that way but soft scrambled is my favorite.

I watched this guy's video and made eggs this way -- sans the nutmeg and with modern equipment. They were very good.

i didnt use quite that much butter
but i'm slowly converting my wife who used to hate when i cooked them this way.

I don't use that much butter either, but I do make them that way and they are very good. This guy sell re-enactor stuff and makes videos re-creating life from those times. In one, he cooks the eggs over an open fire and turns a small branch into a whisk.
