Roasted carrots
Roasted potatoes and onions
Stir fry mixed vegetables (broccolini, onions, julienned carrots)
Sauteed asparagus or green beans similar to the garlic green beans mentioned earlier in this thread.
Those are our typical side dishes. Sometimes we'll make something different, but those are the go-to's that are quick and easy.
ETA: one thing that I wish I did more of is smothered cabbage. I may cook some tomorrow.

sounds great, but nothing beats old school smothered fresh green beans...

skillet, 3-4 slices bacon, cook and remove , leave a couple 3 tablespoons of grease, saute gently a mess of garlic, add back the beans and crumbles bacon, black pepper, toss and cook a bit, add about 1/4 to 1/2 cup chicken broth(better than bouillon) , simmer and cook until soft and stock is greatly reduced

Lately I like to do cabbage and potatoes in the instant pot.
You can add sausage if you'd like. It's really easy and very flavorful. I use pretty much the same recipe as the link below. Season well with salt and pepper or cajun seasoning to taste and I like to top it with some good hot sauce.

Couple of yrs ago I decided to try a wider variety of vegetables . Here’s what worked:
Cabbage cut in wedges and roasted w olive oil and balsamic vinegar
Stir fry snow or sugar snap peas with hot/sweet chile sauce(like Zeas) topped w chopped peanuts
Broccoli roasted with olive oil, lemon zest and sliced shallots
Squash/zucchini/red bell pepper sautéd together with some pesto added at the end
Green beans and cherry tomatoes roasted till tomatoes are soft and beans are done.Toss with all together with pine nuts . So good.
Lots of things are good in stir fry- get some sesame oil and rice wine vinegar if you don’t have them. We really like those small multi-color sweet peppers added in

Ratatouille. Yes, it is a pain to slice all that, but honestly, it is so easy to make and the taste is delicious. Worth the chopping/slicing every time.
