I haven't stuffed bell peppers in a long time. Now you have me craving them. 
I could do a seafood variation with no rice...hmmmmm
I'll be on the lookout for large peppers.

On top is a combination of parm and mozz. There is a bit of mozz inside, but you can't tell in the pic. Needs more!

I'll keep that in mind. Nobody asked, but the stuffing is ground beef and Jimmy Dean's sausage, the trinity, and some caraway seeds.
Normally I use Italian sausage with the ground beef, diced sauteed mushrooms, lots of pine nuts and more trinity and more cheese. I used Jimmy Dean because that's what I had.
