Fish tacos done

Seared tuna, whole grain tortilla, fresh onions, fresh cilantro (herb garden, fresh green onions (herb garden), jalepenos (herb garden not quite ready).

Yellow sauce is technically mayo based, but made a homemade mayo substitute with olive oil. Added chili sauce, honey, garlic, smoked chili powder, lime juice.



The fish is marinated seared tuna

trying to live up to the standards LE set

half sirloin half chuck + kosher salt, black pepper, garlic powder, cayenne, agave nectar .. re-seasoned with salt and pepper just before going in the hot arse pan


flipped once .. added sharp aged ny white cheddar to mine


lid and a splash of water to steam and cook through/melt the cheese


Melted


Toasted bun + yellow mustard, dill pickle, red onion

rock and roll

most people dont know, but a lot of the vendors at jazz fest have to use those to keep up with the bulk production
