Dinner was pretty good, BUT Muriel's needs to use smaller redfish. Those big ones aren't as good as the smaller ones.

If it has a prominent bloodline owing to size that is not removed, redfish and drum will get a nasty taste.

Broke out the fryer tonight.
Made some pasta, and then fried some chicken and eggplant. tossed them in bacon-provolone red gravy. Then plated on top of angel hair. I didn't have much selection of veggies, so I said "go fat" and made some onion rings too.
came out good. not too greasy with peanut oil and high heat.
