Pic later, waiting for wife to get home to finish.

Salmon sushi , salmon is in a salt , sugar brine rub and will wash off in filtered water, will do veggie prep work around 6

Currently
sushi rice was rinsed until clear, boiled for 18mins, and cooked down a mixture of rice wine, sugar, and veg oil to incorporate into the sushi rice once it's cooled down.

Chicken enchiladas from the “grab and go” section at Sam’s. Had to work later today and it will do in a pinch since I had to run by Sam’s for kids school snacks anyway.

Looks good Paul.

We do sliced red onion, yellow squash, zucchini and a bit of soy sauce as a vegetable all the time. What is the shiny stuff on the vegs.

Fried eggplant with sautéed shrimp and a marinara cream sauce. It was going to be my challenge dish, although I had other plans for plating and a few other things. Also, my phone lighting is weird.

Egg dip and then dredge in a combination of pork panko, Parmesan, and almond flour. I didn’t double dip.

What parmesan? Shredded, grated, or the cheap kraft in a can stuff?

First, I took out my big hunk of parmigiana reggiano for grating. Then I thought better if it and grabbed my Kirkland’s big jar of shredded parmigiana reggiano and used that.
