Had a nice meal at Parrain's...oysters, chargrilled and raw, turtle soup, and a Ceasar with fried oysters. All good.

Speaking of gumbo, the wife asked me to cook one. She wanted it early afternoon, but has now changed it to dinner time. I have the roux, stock and veggies simmering but haven't added any chicken or sausage yet. How long can I just let this simmer to prolong the eating time? Or can I cut if off and pick it back up in a couple hours?
