Watermelon Rind Pickle Recipe Anyone?

I had some at Poor Boys Riverside in Lafayette and they were delicious. Realize there are a bunch of recipes online, but was wondering if anyone had a recipe involving some LA ingredients for a more local flavor. Thanks.

I've looked into this recently and would like the board's input as well. I was considering making them as gifts for something stupid but don't want to go through the process of canning them. So I guess they will only keep a week or two and have to be kept refrigerated?

Anyone have any cocktail recipes where they use them as garnish?

I don't have a recipe but, I never understood why pickled watermelon rind recipes don't include watermelon juice? Start with the juice, add salt & sugar until it's balanced & incorporate a bread and butter spice mix with a mild vinegar to accentuate the watermelon flavor. That's just MHO.
