Watching over a BGE - what should I cook?!?

My best friend recently got naval orders to Guantanamo Bay, Cuba, and decided to leave his Big Green Egg under my care for the next 2ish years.

He would be utterly insulted if I left it sitting unused, so I need help on suggestions with what to cook on it.

I'm fairly proficient in the kitchen but don't grill or smoke much. My first effort on the BGE was smoked chicken which turned out fine but not great.


Last night I grilled some soy sauce/garlic/honey marinated shrimp skewers and they were excellent.

I'd love to use this thing 2-3x/week so I'd appreciate any suggestions y'all might have.

He has tons of accessories for it: conveggtor, pizza stone, tiered grates, etc...

I'm thinking my next attempt is a pizza...

Easy. Pork butt

Typically about an hr or so per lb. Smoke around 250 with some apple or cherry wood.

I'd skip pizza, there are far better and easier ways to accomplish great pizza.

Since you want to use it often, you need to add vegetables & seafood into your mix. Roast a few whole eggplants to make baba ganoush, then use the same fire for shawarma style chicken skewers and grilled eggplant planks. After your main cook, toss a few foil-wrapped sweet potatoes or baking potatoes to bake in the falling heat after you close the vents. You'll have a chunk of the next day's lunch or dinner in hand with virtually no effort.

Try some pork chops, do a soy/pineapple sauce or glaze, and grill some pineapple spears brushed with coconut milk to accompany the pork. If you have leftover grilled pineapple, turn it into a salsa for some grilled chicken tacos on day two.

The Egg is just an outside oven--anything you can cook in your oven, you can cook on the egg. Try doing a nice cast iron pan of cornbread.....or put a pot of beans to cook on one side as you quick-grill something for dinner, and then reduce the heat and let the beans simmer 'til you're ready for bed. Remove from egg, stick in fridge, and again, the next day's meal is sorted.

He has a good setup so you are good on accessories already.

Pork butt is a good shout. I cook one every other week and eat it for lunch throughout the week.

I’d also recommend pork ribs and reverse seared steak.

Butts, hams, burgers, wings, London broil, sausages...like others have said, cook several things on it for the next few days.

I just got a BGE last week. No where in town has a conveggtor in stock. I smoked some wings by making a multi layer disk out of foil and laying it over the coals the other day. They were tasty but the skin didn’t crisp enough so I don’t want to do that again. Is there another way to smoke something without that piece?
