i wonder if you could dry age these and actually do it right, and get a steak or 2 out of it.

Here it is seasoned, going to put it in the fridge over night uncovered, take it out about 6, let it sit till 10, cook it at 200 till it hits 125, pull it out, let it sit 20 minutes or so the back into the oven at 500 for 8 minutes. Thoughts?
