Venison chili I made Sunday

For our annual Highland Parade get together, I made some Venison chili.
Started off with 4lbs of ground venison and 2lbs venison sausage. Brother-in-laws are good for something.
Buttermilk soak overnight
My own personal spice blend x3 because I’m making three batches.
Cook meat on stovetop
An onion and some BP just for chunks and a little color
Only the finest tomato sauce and diced tomatoes go in this chili
Excess water was actually fine. It just meant I didn’t need to add any broth later
Add spices
Cook for a couple of hours. This is where I add either broth for liquid or masa for thickness. I didn’t need either with this batch.
I cooked some Camillia red beans all day Saturday with salt and a hambone leftover from New Years.
I add beans to my chili. Sonic right now.
Finished product. O M G

What's the thinking behind the buttermilk soak? Is it to get the gamy taste out of the meat?
And I'm always down with beans in chili. You don't like it, don't eat it.

Has beans, would not eat, other than that looks good. Deer chilly is the best IMO.

It’s supposed to take out the gaminess.

You soak liver in buttermilk before frying for the same reason. Gets some of the "whang" out of it.
