In the market for a vacuum sealer that will last. Will be using for freezing fish mostly, but will also be used to sous vide and portion meals. I plan on using it a good bit.
Does anyone recommend any specific version or brand?
Willing to spend $250 or so if needed. If there are cheaper options that are just as good, please let me know.

Foodsaver. Sam's/Costco has a good one that goes on deal often for $99. Regular is like $150 I think.

I have the foodsaver 4980. I had it for 3 years and love it. Their rolls are great too.
$130 on amazon right now

I've been using plain old Food Saver forever and it still works great.
One recommendation on fish, I like to lay my filets out individually on a baking pan in the freezer and freeze them (or at least partially) then vacuum them. They come out a whole lot better and thaw in no time for a quick meal.

I looked at several to replace and old one that quit. Decided that one with none of the extras was best.
Bought a foodsaver fm2000 on Amazon for $37 two years ago. Still kicking. Looks like it's now $80.
