Vacation breakfast recommendations

Going to a 40+ person week long family reunion. I'm on breakfast detail and am looking for some unique and fun ideas. I will also bring an outdoor 36" griddle. Eggs, omelettes, pancakes are a given.
Anything else?

Not sure it's unique but a make your own breakfast taco bar is delicious and easy. Black beans, ground sausage, shredded hash browns, eggs, cheese, salsa, onions, peppers, tortillas

Other than a grittle what type of equipment will you have access to?
If an oven you could do some baked items such as fritattas or casseroles (hash brown, french toast)

My wife's family did these about once every theee years.
40-50 people. Hilton Head one year. Ojia, Ca another year.
Lots of wine, food and fun
Not something every year but it was great getting everyone together

Grits and grillades works great for a big crowd....you cook the grits overnight in a crockpot, make grillades ahead and the am is easy. Add some fruit salad as a side.
If your family likes competing and cooking, you could have a biscuit cook off....which could also be a scratch biscuit making lesson for the non cooks.

I would stick with breakfast casseroles and frittatas to be honest. That's a big group to feed and I would think that keeping it simple would be the best strategy.

Cajun hash browns like Louies Cafe does.
Potatoes are cheap and are heavy. So they fill people up.
Pre bake a bunch of potatoes and cut them into quarters. Keep them in the fridge until ready to cook.
Put them on the grill with oil, a generous amount of chopped onions, and your choice of seasoning such as Tony's. Add a little water during cooking to moisten them up.
** If you cook bacon or sausage first you can use the grease drippings to brown the potatoes.

Overnight oatmeal, this stuff is amazing
2 cups rolled oats
1 green apple grated
1 cup skim milk
1 cup nonfat plain yogurt
1 banana slices thin
1/4 cup raisins
2 tablespoon chopped walnuts
2 tablespoon slivered almonds
1/2 cup blueberries
1/2 cup strawberries sliced
1 tablespoon honey
Juice from 1/2 of Meyer lemon
Mix well and put in fridge overnight, add more milk if necessary to get the desired consistency, top with additional fresh fruit and nuts if desired
