USDA Depriving Me of Offal

Get a load of this shite.

I buy 1/2 cow as needed from a local farmer, it's how we've gotten our beef for several years.

My latest order arrived with no organs thanks to the govt.

Apparently, they are making the processor store the organs in the body cavity during the hanging process (vs. packaging after slaughter).

If, after some 25+ days hanging, the organs are "dried out," they condemn the organs.

Imagine that, dried out organs after 25 days

TLDR: USDA fricking over local farmers.

So much for my heart chili I was planning.
