The only thing I have done and posted on here before is built a pig roaster out of 48 cinderblocks diamond stainless grate and bottom. Covered pig with aluminum foil and burlap bags and kept burlap bags wet with water.
I am thinking since this is portable that I am going to build it vertical versus horizontal and make a smoker out of it for when I smoke jerky and sausage. I’m thinking of making a top that I can hang doors from to access. Just a thought.

Slight hijack, but related question: for a cochon de lait (hanging verticllay), what does everyone use to hang the pig from? I’ve heard of old swing set, metal stands, etc, but since I have neither, I’m trying to figure out how to suspend the pig/rotisserie in front of the fire

It can hold a 40lb sack of crawfish. I slit the sack open when they’re in there, and hose them until they’re spotless.
It worked pretty well. The plexiglass on the side rails will make it better.
