Turkey injection marinades recommendation

I just made two. For the 2 turkeys I'm cooking....one Cajun, the other traditional.


Cajun

2 sticks of butter.
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 teaspoon of paprika
3 teaspoon of slap ya mamma



Traditional

2 sticks of butter
1 teaspoon of sage
1 teaspoon of rosemary
1 teaspoon of thyme
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of black pepper

No extra salt in either cause I'm dry brining.

I like Emerils. Has Apple cider, crab boil, Worcestershire, beer and spices.

Take two cups of canola oil in a cold skillet. Add a little thyme, rosemary, garlic, whole peppercorns, and a little Cajun spice.

Warm very very slowly for an hour. Try to bring it to 200 degrees.

Strain through a coffee filter. Inject turkey with flavored oil. Tossed strained seasonings inside bird.

Use clarified butter or butter flavored oil if you make your own. The milk solids in butter leech out and burn when frying the turkey.
