Depends on what you are looking for as a true Italian tomato sauce. I'm third generation Sicilian in Birmingham and we have always cooked the same suga (We call it that, in true dialect, it's sugo) since I have been a kid going to my grandparents. I got lucky and married another Sicilian girl (hopefully not a distant cousin) and she cooks it basically the same way. We also add in meatballs which is not truly Italian. It's got all the normal sauce ingredients, crushed tomatoes, garlic, onion, olive oil, tomato paste, basil. Do not, and I repeat, do not add oregano to any suga. Oregano is for a marinara pizza.
One of the best and easiest "true" Italian sauces, especially if you like spicy is arrabiata which is extremely easy.
1. Chop onion and garlic, to your liking.
2. Olive oil in a skillet and sautee down your onions.
3. Add in red pepper flakes and garlic about the same time. (After the onions have sweated down some)
4. Before they burn, add in crushed tomatoes, or what I like to do is take of whole san marzanos and hand crush those to add in.
5. Also add in a bit of tomato paste and thin it out with some water. Add a little salt.
6. Adjust the spice with more red pepper flakes if needed and add in some basil.
7. Easy as that, add to some penne and grate some fresh parmesan on top.

I have started doing basically the above. Differences being, no pepper flakes(We just never have them), and I add a small can of tomato sauce(same brand as the crushed) after allowing the paste to cook a bit. Will never buy jarred sauce again.

That's the thing is that it's so easy to make it at home, and you can always adjust it to your taste or liking. I'm a purist on Italian cooking, but pasta sauce should be your own thing unless you're trying to make a specific dish.

It's in my top 2 things I have learned from this board. The other being proper jambalaya.
